Extraction with Rancilio Silvia, PID Control, Pre-infusion . - Back

Bottomless Portafilter will help with evaluating your tamping skills and the overall setup.

I must to admit that I worked my way backwards, at first I did not use a Bottomless so it took me long time to improve, by the time I got a Bottomless Portafilter it was more to confirm my work and to provide a better view to enjoy the beautiful extraction.  But even so, it quickly expose any flaws, or defects I have.

Bottomless Portafilter, could be more important than any other mod to Silvia,  it will expose any defects that you have.

The goal is to have the extraction pour evenly at the center with no spraying or gushers.

Extracting with Bottomless Portafilter.

What should you look for other than color and time.

  • Flow should start and end symmetrical.

  • Cone should be at centered.

  • No spraying or gushers.

  • Coffee puck should NOT have breaches, ruptures or leaks during the extraction.

  • No dead spots on the basket where there is no flow.

  • Less symmetry & gushers = more unwanted taste.

  • Little and very fine mist is acceptable.

In this Clip you can see how the extraction becomes lighter and lighter,  meaning more unwanted taste.

Too fast and too long, color is too light after 17 seconds

If the coffee puck sticks to the basket so that you need a knock box to get it out and in most cases it's very dry at the top.
You did not have a full extraction, due to: too much coffee that after expanding created a plug, or due to cold water or too little water with uneven dosing.

If the coffee puck fall out but came out in pieces, so portion of the puck left in the basket.
You had too little coffee, and most likely the flow was too fast, and/or you had to compensate with a very fine grind.

If the coffee puck stuck to the screen.
You may have had too little coffee with firm tamping and you had to fine a grind too much.

60ml Glass & Scale.

60 grams = 60 Milliliters = 2 fluid ounces,    espresso at 2 fluid ounces will weigh only 32 grams +/-
